Ingredients

  • 2 English cucumber thinly sliced, large
  • 1 pint cherry tomato halved
  • 1/2 red onion thinly sliced
  • 1/2 cup kalamata olives pitted and halved
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon oregano dried
  • salt to taste, freshly ground
  • black pepper to taste, freshly ground
  • 1/2 cup feta cheese crumbled

Instructions

  1. In a large bowl, combine the sliced cucumbers, halved cherry tomatoes, sliced red onion, and halved kalamata olives.
  2. In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, dried oregano, salt, and black pepper.
  3. Pour the dressing over the salad ingredients and toss gently to coat evenly.
  4. Sprinkle the crumbled feta cheese over the salad just before serving. Devour!
