Greek Fava (Split Pea Dip)
If you enjoy creamy, garlicky hummus, then you're going to love this Greek Fava (Split Pea Dip)!
Ingredients
- 1 cup yellow split peas rinsed
- 1 onion chopped, large
- 2 cloves garlic minced
- 4 cups water
- 1/4 cup olive oil
- lemon juice of 1
- salt to taste
- black pepper to taste
- onion optional, as garnish, chopped onions; drizzle of olive oil
- capers
- olive oil
Instructions
- Combine split peas, onion, garlic, and water in a large pot. Bring to a boil, then reduce heat to simmer.
- Simmer for about 45 minutes, or until the split peas are very soft and the mixture has thickened.
- Remove from heat. Blend the mixture with an immersion blender until smooth. Stir in olive oil and lemon juice. Season with salt and pepper to taste.
- Serve warm or at room temperature, garnished with chopped fresh onions, capers and a drizzle of olive oil, if desired.
