Greek Fries
I had these at a restaurant and just knew I had to bring the Greek flavor to the dinner table at home.

Ingredients
- 4-5 large red skinned potatoes cut into wedges
- 6 tablespoons olive oil
- 5 cloves garlic finely minced
- 3 tablespoons finely chopped parsley
- 3 tablespoons fresh oregano
- ½ cup crumbled feta
- ½ cup homemade tzatziki
- Kosher salt and freshly cracked black pepper
Instructions
- Preheat oven to 450 degrees.
- Place the potato wedges, 3 tablespoons of olive oil and salt and pepper in a zip top bag and shake to combine. Transfer the potatoes to a sil-pat lined baking sheet and evenly spread out the wedges. Transfer to the oven and bake for 30-35 minutes, flipping once, until evenly baked and golden brown.
- Whisk remaining olive oil, chopped garlic, parsley and oregano in a large bowl. Add the mixture to the hot fries and toss to combine. Taste and season with extra salt and pepper as neededArrange on a platter. Sprinkle with feta and dollops of tzatziki and serve alongside lemon wedges. Adjust salt as needed.

Notes
- Tzatziki is one of my favorite dips for SO many dishes. It is absolutely instrumental in giving these fries a Greek flair.
