Ingredients

  • 8 chicken thighs bone in, skin on
  • ⅓ cup fresh lemon juice
  • ⅓ cup olive oil
  • 1 tablespoon Dijon mustard
  • zest of 2 lemons
  • 4 cloves garlic grated
  • 2 teaspoons fresh Rosemary
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper

Instructions

  1. Add your chicken thighs to a food storage container and set aside.
  2. Add the garlic, lemon juice, olive oil, dijon mustard, lemon zest, rosemary, oregano, salt and pepper to a small mixing bowl.
  3. Whisk until well combined and emulsified.
  4. Pour the marinade over the chicken and mix, making sure all the chicken is well coated. Cover and chill in the fridge for 1 hour.
  5. Preheat oven to 375°F.
  6. Transfer the chicken to a large oven-safe skillet or 9 x 13 casserole baking dish and pour the remaining marinade over the tops.
  7. Bake for 45 minutes or until the internal temperature reaches at least 165°F when checked with a meat thermometer, then serve with your favorite side or salad.
