Greek Okra Strew in Tomato Sauce (Bamies Latheres)

A traditional Greek okra stew made with a delicious tomato and olive oil-based sauce.

Ingredients

  • 800 gr okra
  • 400 gr crushed tomatoes
  • 600 ml vegetable stock
  • 140 gr onion chopped
  • 100 gr carrot cut into small cubes
  • 120 ml white wine
  • 1 tbsp tomato paste
  • 1 tbsp granulated sugar
  • ½ tbsp smoked paprika
  • ¼ tsp oregano dry
  • 5 mint chopped, leaves
  • salt
  • black pepper
  • 100 ml olive oil

Instructions

  1. Heat a deep saucepan over medium-high heat.
  2. Add the olive oil, carrot, and onion and sauté for 2-3 minutes until soft.
  3. Add the okra together with the tomato paste and sauté for another 2 minutes.
  4. Deglaze with the wine and let all the alcohol evaporate.
  5. Add the vegetable stock, the crushed tomatoes, paprika, oregano, sugar, mint leaves, salt, pepper and mix.
  6. Let it simmer for about 25-30 minutes, until the sauce is completely set.
  7. Serve the okra warm.

Notes

  • Chef’s tip: When the okra is ready, do not stir with a spoon, but by shaking the pot so that they do not dissolve.
