Ingredients

  • ¼ cup olive oil see notes
  • 2 tablespoons red wine vinegar
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons lemon juice from ½ lemon
  • 1 tablespoon feta brine see notes
  • 1 tablespoons chopped fresh dill
  • ½ teaspoon dried oregano
  • ¼ teaspoon sea salt
  • 1 clove garlic very finely minced

Instructions

    Cup of Yum
  1. Add all the ingredients to a medium-sized bowl.
  2. Whisk until well combined. (If you're not using the dressing right away, you can add the ingredients to a jar with a lid then shake the jar when you're ready.)
  3. Use the dressing right away or store it in your fridge in a jar for up to 10 days.

Notes

  • Use the best extra virgin olive oil you have for this recipe. Ideally, it will taste grassy and a little spicy. But don't worry if you only have cooking olive oil in your pantry, this dressing will still taste great!
  • Feta brine is the liquid that feta cheese is often packed in. If yours comes without brine, skip this ingredient. You may need to add a tiny extra pinch of salt to the dressing.
