Greek Salad Recipe

Ingredients

  • 12 ounces salad greens
  • 2 large tomatoes cut into chunks or 1 pint cherry tomatoes, halved
  • 1 medium red onion thinly sliced
  • 1 medium cucumber thinly sliced
  • 1 cup black olives pitted
  • 1/4 /4 cup pepperoncinis peppers or Greek deli peppers
  • 2 medium bell pepper seeded and chopped
  • 1 cup feta cheese crumbled
For the Dressing
  • 1/4 /4 cup olive oil
  • 1/4 /4 cup red wine vinegar
  • 1/2 /2 teaspoon garlic powder
  • 1/2 /2 teaspoon dried basil
  • 1/2 /2 teaspoon dried oregano
  • 1/2 /2 teaspoon onion powder
  • 1 teaspoon Dijon mustard
  • salt and pepper to taste

Instructions

  1. Assemble salad greens, tomatoes, onion, cucumber olive, peppers, in a large bowl.
  2. To make the dressing, simply add all dressing ingredients to a Mason jar, fit with the lid and shake vigorously until well-combined.
  3. Pour about half of dressing over salad and toss. Then, top with Feta cheese and serve with additional dressing on the side.
