Greek Salad Skewers

Ingredients

Marinated Feta:
  • 3 tbsp good olive oil
  • 1 tbsp fresh lemon juice
  • ½ tbsp fresh dill, chopped
  • ½ tbsp fresh parsley, chopped
  • 1 clove of garlic, minced
  • Sea salt and freshly cracked pepper, to taste
  • Block feta, diced into 8 bite-sized pieces
Skewers:
  • ¼ red onion, cut into 8 bite-sized pieces
  • 8 cherry tomatoes
  • ¼ English cucumber, peeled, halved Lengthwise & sliced
  • 8 kalamata olives

Instructions

  1. Marinate the feta by combining olive oil, lemon juice, dill, parsley, minced garlic, sea salt, and freshly cracked pepper to taste.
  2. Mix well then add the feta cubes and gently toss to coat. Set aside to allow flavors to mingle. 
  3. If your red onion is very strongly flavored, place cut pieces in a bowl of ice water for 15 minutes then drain well on paper towels.
  4. Assemble the Greek salad skewers by layering the cherry tomatoes, red onion, cucumber, olives, and marinated feta on small wooden skewers.
  5. Place on a serving plate. Serve and enjoy.
