Ingredients
Marinated Feta:
- 3 tbsp good olive oil
- 1 tbsp fresh lemon juice
- ½ tbsp fresh dill, chopped
- ½ tbsp fresh parsley, chopped
- 1 clove of garlic, minced
- Sea salt and freshly cracked pepper, to taste
- Block feta, diced into 8 bite-sized pieces
Skewers:
- ¼ red onion, cut into 8 bite-sized pieces
- 8 cherry tomatoes
- ¼ English cucumber, peeled, halved Lengthwise & sliced
- 8 kalamata olives
Instructions
- Marinate the feta by combining olive oil, lemon juice, dill, parsley, minced garlic, sea salt, and freshly cracked pepper to taste.
- Mix well then add the feta cubes and gently toss to coat. Set aside to allow flavors to mingle.
- If your red onion is very strongly flavored, place cut pieces in a bowl of ice water for 15 minutes then drain well on paper towels.
- Assemble the Greek salad skewers by layering the cherry tomatoes, red onion, cucumber, olives, and marinated feta on small wooden skewers.
- Place on a serving plate. Serve and enjoy.
