Greek Street Corn

This Greek-inspired street corn features charred, smoky corn on the cob smothered in a spice-infused yogurt sauce, sprinkled with feta and zaatar.

Ingredients

  • 4 corn on the cob husk and silk removed
  • 1/2 cup Greek yogurt
  • 1 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/2 tsp red pepper flakes
  • 1/2 tsp dried oregano
  • 1 lemon juice and zest from half
  • 1 cup feta cheese crumbled
  • 2 tbsp Lebanese Zaatar
  • 1 tsp sumac

Instructions

  1. Heat grill to High (450-500°F). Clean and oil grill grates.
  2. Remove the husks and silk from the ears of corn leaving portion of stalk as a handle.
  3. Mix together the yogurt, oil, salt, red pepper flakes, oregano and lemon juice and zest. In another small bowl mix together the feta, zaatar and sumac.
  4. Grill corn 3 minutes per side for a total of 12 minutes until slightly charred all over. Remove from grill and brush each ear of corn with yogurt mixture.
  5. Sprinkle and gently press the crumbled feta cheese mixture on all sides of each ear of corn. Serve warm with remaining sliced lemon to squeeze on top.
