Greek Style Lemon Roasted Potatoes

Greek Lemon Potatoes are a delicious, savory side dish perfect for any day of the week!

Ingredients

  • 2 ½ pounds potatoes peeled and quartered if large, cut in half if smaller
  • 4 cloves garlic minced
  • 1 lemon juiced
  • ¼ cup olive oil
  • 1 ½ cups chicken broth
  • ½ teaspoon dried oregano
  • salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F.
  2. Combine all ingredients except potatoes.
  3. Place potatoes in a greased 9x13 pan (metal is preferred). Pour chicken broth mixture over potatoes.
  4. Roast 45 minutes. Stir and roast an additional 45 minutes.
