Greek Style Stuffed Mushrooms

Ingredients

  • 20 Medium size button mushrooms about 12 ounces
  • 3 tablespoons whole grain breadcrumbs
  • 1 tablespoon + 1 1/2 teaspoon olive oil plus extra for drizzling
  • 3 ounces feta
  • 3 teaspoon soft cheese such as cream cheese I used katiki-a greek goats cheese
  • 3 teaspoon dried oregano
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped basil
  • 1 tablespoon chopped mint
  • pepper

Instructions

  1. Preheat oven at 400 degrees Fahrenheit (200 degrees Celsius)
  2. In a bowl, mash all the ingredients (except mushrooms) with a fork, until somewhat creamy.
  3. Wash or peel the mushrooms.
  4. Fill the mushrooms with the filling, placing them on a pan.
  5. Once filled, sprinkle with a few more bread crumbs, and add a few drops of olive oil on each mushroom (I used a sprayer).
  6. Bake for about 15-20 minutes until top is golden.
  7. Sprinkle with some herbs and serve warm.
