Ingredients

  • 1 cup plain greek yogurt (I use nonfat)
  • ½ whole English cucumber chopped
  • 1 teaspoon coarse kosher salt divided
  • 1 clove garlic mashed
  • 1 whole lemon juiced and zested
  • ½ tablespoon olive oil
  • ½ teaspoon ground black pepper
  • 2 tablespoons fresh dill

Instructions

    Cup of Yum
  1. Start by adding your cucumber and ½ teaspoon kosher salt to a bowl and mix around. Let it sit for 10 minutes to extract extra water from the cucumbers.
  2. Remove the cucumbers from the bowl and squeeze with cheesecloth or a paper towel to remove the water and return them back to the bowl.
  3. Add in your garlic, lemon zest, lemon juice, fresh dill, salt, and pepper. Mix together.
  4. Drizzle in the olive oil and mix to combine.
