Ingredients
- 1 cup plain greek yogurt (I use nonfat)
- ½ whole English cucumber chopped
- 1 teaspoon coarse kosher salt divided
- 1 clove garlic mashed
- 1 whole lemon juiced and zested
- ½ tablespoon olive oil
- ½ teaspoon ground black pepper
- 2 tablespoons fresh dill
Instructions
- Start by adding your cucumber and ½ teaspoon kosher salt to a bowl and mix around. Let it sit for 10 minutes to extract extra water from the cucumbers.
- Remove the cucumbers from the bowl and squeeze with cheesecloth or a paper towel to remove the water and return them back to the bowl.
- Add in your garlic, lemon zest, lemon juice, fresh dill, salt, and pepper. Mix together.
- Drizzle in the olive oil and mix to combine.
