Green Bean Almondine
Green Bean Almondine features crisp-tender green beans tossed with browned sliced almonds and a buttery lemon seasoning. After briefly boiling and chilling the beans to preserve color and texture, they are reheated in butter with lemon juice, salt, and pepper, allowing the nuts to contribute a toasted crunch. This side dish pairs well with many meals and brings balanced freshness and nuttiness.
Ingredients
- 2 pounds Green bean edges trimmed, fresh
- 4 tablespoons butter
- 1/4 cup almonds sliced
- 1 tablespoon lemon juice
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper coarse ground
Instructions
- Boil the green beans in a pot of water for 2 minutes before dumping into an ice bath and letting cool.
- In a large skillet cook melt the butter on medium heat and add the sliced almonds stirring them constantly while watching for them to JUST start turning brown before immediately removing them.
- Dry the green beans well and add to the skillet to heat them back up and toss with remaining butter, lemon juice, salt, and pepper before topping with the browned almonds

- Boil green beans for exactly 2 minutes, then immediately shock in ice water to maintain crispness and vibrant color.
- Toast sliced almonds carefully in butter and remove them as soon as they begin to brown to prevent burning.
