Green Bean Salad with Mustard Vinaigrette

This side dish is absolutely delicious and compliments tons of entrees perfectly! You'd never guess it only takes minutes to prepare.

Ingredients

  • 1 pound green beans, trimmed and chopped
  • 2 teaspoons Dijon mustard (I used grainy dijon but any will do!)
  • 4 teaspoons apple cider vinegar
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/2 cup sliced almonds, toasted

Instructions

  1. Bring a large pot of salted water to a boil. Add the green beans and cook until tender, about 6-8 minutes. Drain and rinse with cold water.
  2. In a small bowl, whisk together the mustard, vinegar, olive oil, and salt.
  3. Pour the vinaigrette over the green beans and toss to combine. Top with the sliced almonds.

Notes

  • You can buy sliced almonds already toasted at most grocery stores, but if you can’t find them, you can toast your own. Just add them to a sauté pan over medium heat and toast for about 5 minutes until golden brown.
