Green Beans with Feta and Dill

Ingredients

  • 1 lb. fresh green beans ends trimmed
  • 2 tbsp red wine vinegar
  • 1 tbsp minced shallot
  • 1 clove of garlic minced
  • 3 tbsp extra virgin olive oil
  • sea salt and fresh cracked pepper to taste
  • ¼ small red onions sliced thinly
  • feta cheese crumbled
  • 2 tbsp fresh dill chopped

Instructions

  1. In a small glass jar add the chopped shallot, minced garlic, red wine vinegar, olive oil, sea salt, and freshly cracked pepper, to taste; whisk well, and set aside to let the flavors mingle.
  2. Place in a large pot of boiling water for 3-4 minutes, I like mine tender but still crisp.
  3. Drain and place in ice-cold water to stop them cooking and to preserve the bright green. Drain and place in a bowl.
  4. Add the sliced onion, fresh dill, and salad dressing to taste. Toss until evenly coated.
  5. Place in a serving dish and sprinkle the top with feta cheese. Serve and enjoy.
