Green Beans with Lemon and Shallots

Ingredients

  • 1 pound green beans wash and snap off the ends
  • Drizzle of olive oil
  • 1 Tablespoon minced shallots
  • Juice of one lemon
  • salt and pepper to taste

Instructions

  1. In a large saute pan heat the olive oil. Add the shallots. Cook for one minute.
  2. Stir in the green beans. Pour the juice of one lemon over the green beans in the pan. Toss the green beans and cook until tender, but still crisp.
  3. Season the beans with salt and pepper. Serve warm.
