Ingredients

  • 1 ounces rotini pasta
  • 1 tablespoon olive oil
  • 1 teaspoon garlic minced
  • 1/2 onion chopped
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 1 cup corn
  • 1 green chiles canned, chopped
  • 1 cup chicken shredded, cooked
  • 1 cup chicken broth
  • 2 cups heavy cream
  • 1-1/2 cups Monterey jack cheese shredded
  • salt to taste
  • black pepper to taste

Instructions

  1. Cook the La Moderna Rotini pasta per package directions. Rinse, drain and set aside.
  2. In a large skillet over medium-high heat, add olive oil.
  3. Add onions, red and bell pepper, corn, and garlic and saute until onions are translucent. Add chicken and green chiles. Season with salt and pepper.
  4. Add shredded cooked chicken and chicken broth. Add heavy cream and reduce heat.
  5. Add the La Moderna Rotini and toss.
  6. Stir in cheese and cilantro.
  7. Enjoy!
