Green Chile Chicken Pasta
This Green Chile Chicken Pasta is a rich and creamy, spicy and savory Southwest style pasta dish with green chiles and corn that makes a delicious weeknight meal or an impressive gourmet dinner.
Ingredients
- 1 ounces rotini pasta
- 1 tablespoon olive oil
- 1 teaspoon garlic minced
- 1/2 onion chopped
- 1 red bell pepper chopped
- 1 green bell pepper chopped
- 1 cup corn
- 1 green chiles canned, chopped
- 1 cup chicken shredded, cooked
- 1 cup chicken broth
- 2 cups heavy cream
- 1-1/2 cups Monterey jack cheese shredded
- salt to taste
- black pepper to taste
Instructions
- Cook the La Moderna Rotini pasta per package directions. Rinse, drain and set aside.
- In a large skillet over medium-high heat, add olive oil.
- Add onions, red and bell pepper, corn, and garlic and saute until onions are translucent. Add chicken and green chiles. Season with salt and pepper.
- Add shredded cooked chicken and chicken broth. Add heavy cream and reduce heat.
- Add the La Moderna Rotini and toss.
- Stir in cheese and cilantro.
