Green Chili Bacon Cheeseburger Sliders

Homemade sliders are the best since you don’t have to skimp on the cheese or the crisp bacon strips!

Ingredients

  • 2 diced green chiles 4-ounce cans, divided
  • ½ tablespoon honey
  • 1 tablespoon lime juice freshly squeezed
  • 1 pound ground beef
  • 3 ounces Monterey jack cheese cut into tiny cubes, plus more for topping
  • 2 cloves garlic minced
  • ½ teaspoon cumin ground
  • ½ teaspoon onion powder
  • salt to taste, Kosher salt and freshly ground
  • black pepper to taste, Kosher salt and freshly ground
  • 4 lices Bacon
  • 4 pretzel slider buns toasted, for serving, split
  • lettuce for serving
  • 2 Roma tomato thinly sliced, for serving

Instructions

  1. In a small bowl, combine 1 1/2 cans green chiles, honey and lime juice; set aside.
  2. In a large bowl, combine ground beef, monterey jack cheese, garlic, cumin, onion powder, salt and pepper, to taste. Divide the ground beef mixture into 4 balls; press each lightly to form 1/4-inch-thick patties.
  3. Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate, reserving the bacon fat.
  4. Add patties to the skillet and cook until browned and cooked through to medium rare, about 3-4 minutes per side, flipping only once. In the last minute of cooking, top each patty with additional monterey jack cheese, covering to melt.
  5. Serve burgers on rolls with bacon, green chili sauce, lettuce and tomatoes.
