Green Chili Egg Casserole

Ingredients

  • 16 eggs
  • 1 cup heavy cream
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • 7 oz can green chiles

Instructions

    Cup of Yum
  1. Preheat oven to 425.
  2. In a large bowl, whisk together the eggs, heavy cream, salt and pepper.
  3. Stir in the cheese and green chiles.
  4. Pour the egg mixture into a greased 13 x 9 casserole dish.
  5. Bake on center rack for 35 minutes, or until the casserole is slightly browned on top and fully set in the center.
  6. Cool for 10 minues prior to serving.

Notes

  • Serve this casserole with your favorite toppings - my family likes hot sauce, chopped red onions, sliced jalapenos, sour cream, chopped cilantro, salsa and sliced avocado.
