Ingredients

  • 1 tablespoon coriander seeds
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon white peppercorns
  • 1/2 ounce green Thai chilies chopped and seeds removed if desired
  • 1/2 ounce lemongrass chopped
  • 2 tablespoons galangal minced
  • 3 tablespoons shallots chopped
  • 4 cloves garlic minced
  • 1 teaspoon fresh lime zest
  • 4 cilantro stems finely chopped
  • 1 tablespoon water or as needed

Instructions

  1. Toast coriander seeds, cumin seeds, and white peppercorns in a dry skillet over medium heat until fragrant, about 2 to 3 minutes.
  2. Grind the toasted spices to a fine powder using a mortar and pestle or spice grinder.
  3. In a food processor, combine the ground spices, green Thai chilies, lemongrass, galangal, shallots, garlic, lime zest, and cilantro stems.
  4. Blend to a coarse paste, adding water as needed to achieve your desired consistency.
