Ingredients
- 2-3 cups cabbage or iceberg lettuce chopped
- 1 cup arugula chopped
- 1 cup baby spinach chopped
- 2-3 Persian cucumbers small and chopped
- green onions sliced (1 bunch)
- ¼ cup chives or green onions, chopped
Dressing Ingredients:
- ¼ cup Greek yogurt
- ¼ cup spinach
- ¼ cup cilantro or parsley
- ¼ cup basil
- 1 green onion sliced
- 2 cloves garlic
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp rice vinegar
- salt and pepper to taste
Instructions
- For the dressing: Add the dressing ingredients in a blender or food processor and blend until smooth and creamy. Keep pulsing as needed until there are no lumps.
- To make the salad: Finely chop or slice all the ingredients and place in a large salad bowl. You can chop them all by hand, or save time and buy the greens chopped and prepped.
- Pour the dressing onto the salad and toss to combine. Sprinkle with shredded or shaved parmesan cheese if desired. Serve immediately.
