Ingredients

For the pumpkin seed dressing
  • 4 tablespoon pumpkin seeds divided
  • 5 tablespoon olive oil
  • 2 tablespoon apple cider vinegar
  • 1 tablespoon maple syrup
  • black pepper
  • salt
For the green salad
  • 4 cups lettuce leaves mixed, 250 g
  • 1 pear ripe
  • 1 apple
To serve (optional)
  • parsley chopped, small handful, fresh
  • 2 pumpkin seeds reserved from the dressing, tbps
  • 1 tablespoon sesame seeds white, black or mixed
  • black pepper
  • salt

Instructions

    Cup of Yum
  1. Heat a dry frying pan over a medium heat, then add the pumpkin seeds and toast them for a few minutes, shaking often until they just start to darken slightly. Reserve 2 tablespoons of them to garnish, and pour the remainder into a food processor or blender. Add the rest of the dressing ingredients, plus 2 tablespoon of water, and blitz until fairly smooth.
  2. To assemble the salad, chop the radicchio into bite sized pieces and add them to a large serving bowl with the other salad leaves then toss.
  3. Core the pear and apple and thinly slice them with the skins on. Add them to the salad along with the dressing and toss.
  4. Serve sprinkled with the parsley, reserved pumpkin seeds and sesame seeds and season with salt and pepper.

Notes

  • Toast pumpkin seeds carefully to avoid burning and preserve their nuttiness for the dressing and garnish.
  • Slicing apples and pears thinly with skins on adds natural sweetness and crisp texture to the salad.
  • Use fresh parsley and a mix of sesame seeds to complement the flavors and add crunch in the final serving.
  • The recipe is inspired by Happy Pear and focuses on simple, fresh ingredients for the dressing and salad.
