Green Vegetable Soup Recipe 

This green vegetable soup diet is packed with powerful nutritious veggies like bottle gourd (calabash), green onions, coriander, and mint for a wholesome, super-healthy, light-on-tummy meal. A perfect healthy green vegetable soup recipe or green soup helps stimulate and promote weight loss!

Ingredients

  • 1 teaspoon oil
  • 1 teaspoon cumin seeds
  • 2 scallions/green onions
  • 1 bunch coriander/cilantro
  • 1 Bottle gourd/calabash
  • 1 teaspoon black salt
  • 1 tablespoon lemon juice
  • 3 cup water

Instructions

    Cup of Yum
  1. Roughly chop green onions and bottle gourd (calabash) after thoroughly washing all the greens.
  2. To a medium hot pan, add oil and roast cumin seeds.
  3. Add spring onions, and saute on low heat. Repeat this with calabash (lauki).
  4. Next, add coriander and saute for a minute on low heat. Pour water, cover with a lid and cook for 5-8 mins on high heat. Simmer it for 2-3 mins on low heat.
  5. Let it cool. Add mint leaves, salt and lemon juice and blend it to a puree. Adjust it according to your taste.
  6. Reheat it in the same pan and serve warm. Here you go with yummy, healthy green soup prepared with green leafy vegetables.
