Ingredients

  • 2 chicken breast
  • 1 cup chicken stock or broth
  • 2 tablespoon cream cheese
  • 3 tablespoon cream double
  • 2 tablespoon cornflour (corn starch)
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper ground
  • ½ teaspoon mixed herbs dried
  • 1 puff pastry ready-rolled
  • 1 tablespoon vegetable oil
  • 1 egg for brushing the pasties

Instructions

  1. Cut the chicken breasts into chunks and season with salt and pepper.
  2. Heat up the oil in a pan, add the chicken pieces and fry on each side for 2-3 minutes until cooked through and golden brown.
  3. Pour in the chicken stock, cream cheese and double cream (make sure they are at room temperature otherwise they will curdle) and bring to a boil.
  4. Mix the cornflour with 2 tablespoons of cold water, and add it to the pan.
  5. Stir well until you get a thick sauce.
  6. Add the dried herbs, and check if the chicken needs any more seasoning.
  7. Remove from the heat and leave to cool completely.
  8. Roll out the puff pastry, and cut it into 6 rectangles.
  9. Scoop out about one tablespoon and a half of the filling onto each rectangle, fold over, then use a fork to seal well the edges.
  10. Beat the egg well, and brush each pasty with it.
  11. Use a fork to prick each pasty in a few places - that will allow the steam to escape while baking.
  12. Bake in the preheated oven at 180 degrees Celsius (350 Fahrenheit) for 20 minutes or until golden.

Notes

  • Bring cream cheese and double cream to room temperature before mixing to prevent curdling in the hot sauce.
  • If cold, temper cream cheese and cream by gradually adding hot stock until warmed evenly before adding to the pan.
