Grilled Beef Galbi (Korean Short Ribs)
Grilled Beef Galbi features thinly sliced beef short ribs marinated in a savory blend of soy sauce, mirin, brown sugar, apple juice, garlic, and ginger. The marinade not only tenderizes the meat but also imparts a balanced sweet and salty flavor. After marinating for several hours, the ribs are grilled to develop a golden exterior while keeping the inside juicy. Served with a reduced marinade and garnished with green onions, this dish offers a harmonious mix of textures and flavors ideal for a flavorful main course.
Ingredients
- 4 lb beef short ribs about 1/4 inch thickness
- 3/4 cup soy sauce low-sodium
- 1/4 cup mirin
- 1/2 cup brown sugar
- 1/3 cup apple juice
- 2 garlic minced, cloves
- 2 tbsp ginger minced, fresh
- 1/3 cup green onions garnish
Instructions
- In a food safe bag, combine the soy sauce, rice vinegar, brown sugar, apple juice, garlic cloves, and ginger together.
- Add the ribs, seal the bag, and massage the marinade in through the outside of the bag. Allow the ribs to marinate for at least 4 hours.
- Remove the Beef Short Ribs from the marinade and set the bag of marinade aside. Grill the ribs on each side for about 4 minutes or until each side is golden and the internal temperature is at 145°F.
- In a small saucepan, boil the marinade until it reduces by half (this should take about 7 minutes). Garnish the Beef Short Ribs with green onions and serve them with the marinade on the side for dipping.
