Grilled Brie with Peaches
Grilled Brie with Peaches is a fantastic summer appetizer that combines creamy, melty cheese with juicy peaches, chopped candied pecans, fresh basil, and a drizzle of sweet honey.
Ingredients
- 1 (8 oz) Brie cheese cold, wheel soft-ripened
- 2 teaspoons olive oil for brushing
- 2 tablespoons honey divided
- 1 cup peach diced
- 1/4 cup pecans candied, chopped
- 1 tablespoon mint for garnish, chopped fresh, or basil leaves
- sea salt for sprinkling, flaky
- Crostini for serving, or crackers
Instructions
- Preheat grill or grill pan to medium high heat.
- Brush the olive oil over both sides of the brie.
- Place the brie on the grill and grill for 2 to 3 minutes per side or until the brie feels warm and soft on the inside. When flipping the brie, use a spatula, being careful to not break the brie open. Don't overcook the brie or it will melt out and make a mess.
- Transfer the brie from the grill to a platter. Drizzle with 1 tablespoon of honey and top with diced peaches, candied pecans, and mint or basil. Drizzle with the remaining honey and a sprinkle with a little sea salt.
- Serve the brie with crostini or crackers.
Notes
- The brie is best the day it's made.
