Ingredients
- 1 chicken breast medium
- ½ avocado
- 2 wholemeal bread slices
- 1 mozzarella cheese slice
- ⅛ teaspoon cayenne chili pepper
- ¼ teaspoon paprika
- ¼ teaspoon granulated garlic
- ¼ teaspoon salt
- ½ teaspoon lemon juice
Instructions
- Halve the chicken breast, and use a meat tenderizer to thin each half.
- Mix the cayenne chilli peppers, paprika, garlic and salt, then rub the mixture onto the chicken breast halves.
- Heat up a grill pan, place the chicken halves and grill on both sides for about 5-6 minutes until cooked through.
- Use a fork to mash the avocado, then drizzle the lemon juice over, and spread it on one bread slice.
- Place the chicken breasts on top of the avocado, then top it with the cheese slice and the other bread slice.
- Grill the sandwich on both sides for about a minute, until the cheese is melted. Serve hot or cold.
Notes
- Avocadoes tend to brown quickly if they are not consumed straight-away, so using lemon juice helps prevent the browning process.
- Squeeze a bit of lemon of them, and they will keep fresh for longer. You can use the same tricks if you use avocadoes in salads or dips.
