Grilled Chicken Satay Skewers (with Peanut Sauce)

Chicken tenders marinated in a homemade satay marinade, threaded on skewers and grilled to perfection. Serve with these delicious Chicken Satay Skewers with Peanut Sauce!

Ingredients

For the chicken
  • 1 pound chicken tenders
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 tablespoon ground ginger
  • 1 tablespoon curry powder
  • 1 tablespoon garlic minced
For the Peanut dipping sauce
  • 1 cup peanut butter
  • 14.5 ounces chicken stock
  • 1/4 cup lime juice fresh fresh
  • 3 tablespoons dark brown sugar
  • 1/2 teaspoon curry powder
  • 2 1/2 tablespoons soy sauce
  • 2 tablespoons fresh ginger peeled, grated
  • 1 teaspoon crushed red pepper flakes

Instructions

For the chicken
    Cup of Yum
  1. Thread chicken on skewers (soak the skewers in water for 30 minutes first)
  2. Mix the rest of the ingredients in a shallow pan.
  3. Coat skewered meat with marinade, and allow to marinate 30 minutes
  4. Grill or Broil chicken skewers until done
  5. Serve with Peanut dipping sauce
For the Peanut dipping sauce
  1. Place peanut butter in heavy medium saucepan.
  2. Slowly add chicken broth, then all other ingredients
  3. Stir over medium heat until smooth and thick, about 6 minutes
