Grilled Chicken Wrap

Ingredients

Wrap
  • 6 tortillas flour or corn
  • 2 cups chicken grilled, 200g
  • 1 red onion sliced
  • 2 tablespoons black olives
  • 3.52 ounces feta cheese 100 g
Avocado Spread
  • 1 avocado medium size, ripe
  • 1 garlic minced, clove
  • 3 tablespoons mayonnaise
  • lime juice of half a lime
  • ¼ teaspoon black pepper ground

Instructions

  1. In a small bowl, mash the avocado with a fork. Add garlic, mayonnaise, lime juice and black pepper and stir to combine.
  2. Heat the tortillas in a skillet or a microwave. 
  3. Spread avocado in the middle of a tortilla, then top with chicken, onion, olives and feta cheese.
  4. Assemble by folding the bottom up onto the filling, then each of the sides. Press and roll up. Repeat the process using the rest of the tortillas.
  5. Cut wraps in half (if desired) serve, and enjoy!

Notes

  • This recipe is perfect for using leftover grilled chicken but you can also use leftover rotisserie chicken, canned chicken or feel free to cook chicken specifically for this recipe. 
  • To make the wrap easier to eat, slice the grilled chicken breast into thin strips before assembling the wrap.
  • Choose a ripe avocado for the spread. It should be slightly soft to the touch but not mushy.
  • Enhance the flavor and texture of your wrap by adding fresh ingredients like lettuce, tomatoes, and onions.
  • Warming the tortilla in a skillet or microwave for a few seconds will make it more pliable and easier to wrap.
  • To prevent fillings from falling out, fold in the sides of the tortilla before rolling it up tightly. Wrapping the filled tortilla in parchment or foil can also help hold everything together, especially if you're making them ahead of time or taking them on the go.
