Ingredients

  • 2 large chicken breasts
  • 4 large wraps
  • 4-8 tbsp light Mayo
  • 1 cup thinly sliced strawberries
  • ¼ cup diced green onion
  • 4-8 tbsp poppy seed dressing
  • ¼ cup crumbled feta
  • 1 avocado
  • 1 cup leaf lettuce or spinach

Instructions

    Cup of Yum
  1. Prep the chicken – For super juicy chicken, cook to recipe instructions found in this blog post: Ninja Foodi Grilled Chicken or grill it to your liking – this recipe is excellent with meal prepped chicken! Slice thinly.
To make the wrap:
  1. I highly recommend microwaving the wrap for 10 seconds so it’s easiest to roll. It may also be helpful to place a damp paper towel around the outside of the wraps if they are particularly dry.
  2. **If making all 4 wraps at once, simply line them up in a line and make at 4x speed! Lay the warm tortillas flat on a plate, spread 1 tablespoon of mayo on the wrap, then place thinly sliced grilled chicken pieces on the wrap.
  3. Top with a layer of strawberries (roughly ¼ cup of berries on each wrap).
  4. Pour (1) tablespoon of poppy seed dressing, crumbled feta cheese, and green onions onto the wrap. If you’d like to add another tablespoon of mayo or poppyseed dressing, add it here (I personally did more mayo :)
  5. Top with avocado slices. Press ¼ cup of greens on top (the dressing and avocado should help the lettuce stick a bit).
  6. Roll each wrap like a burrito: take the bottom edge of the wrap and fold it up over the fillings and fold in both sides. Continue rolling tightly but carefully, ensuring the sides stay folded in and the fillings do not spill out.
  7. Slice in half and enjoy!

Notes

  • You can make these up to 8-10 hours in advance. With avocado and fresh fruit on your grilled chicken wrap,  any longer and it won’t last well. If you do make it ahead or have leftovers, wrap the wrap tightly in aluminum foil and store in the fridge.
