Grilled Cilantro Lime Chicken

Ingredients

  • ¼ cup fresh lime juice
  • ¼ cup chopped fresh cilantro
  • 2 tablespoons avocado oil
  • 2 cloves garlic minced
  • 2 teaspoons grated lime zest
  • 1 teaspoon salt
  • ½ teaspoon ground pepper
  • ½ teaspoon ground cumin
  • ½ teaspoon red pepper flakes
  • 1 ½ pounds boneless skinless chicken thighs

Instructions

  1. In a gallon-sized resealable plastic bag, combine the ingredients for the marinade. Add the chicken thighs and massage the bag with your hands to coat the chicken in the marinade.
  2. Press out as much air as possible and seal the bag tightly. Let marinate in the refrigerator for at least 1 hour or up to overnight.
  3. Preheat the grill to medium. Remove the chicken from the bag and discard the marinade. Grill the chicken until nicely browned and cooked though, 4 to 15 minutes per side. The internal temperature should reach 165 degrees F on an instant-read thermometer.
