Ingredients

  • 4 grilled corn cobs, recipe HERE
  • 4 avocados peeled and diced
  • 1 bunch cilantro chopped
  • 1 cup cherry tomatoes halved
  • 1 Jalapeño diced
  • ½ red onion diced
  • ½ cup cotija cheese crumbled
  • juice of three limes
  • 3 Tablespoons olive oil
  • salt and pepper to taste

Instructions

  1. Cut the corn off of the cob and place it in a large bowl.
  2. Add all the remaining ingredients and stir to combine.
  3. Chill in the fridge until ready to serve, at least 30 minutes.
