Grilled Greek Chicken Kabobs
Simple and easy to make Greek-style chicken kabobs topped with feta cheese, fresh herbs, and tomatoes.

Ingredients
Marinade:
- ½ cup plain greek yogurt
- ¼ cup extra-virgin olive oil
- 2 tbsp green olive tapenade
- 1 tbsp white wine/balsamic vinegar
- 2 tbsp fresh oregano leaves chopped (or 2 teaspoons dried)
- 2-3 garlic cloves minced
- Kosher salt and ground pepper to taste
Skewers:
- 1 lb boneless skinless chicken breasts, cut into 2-inch pieces
- 1 large red bell pepper seeded and cut into 1 ½-inch cubes
- 1 large red onion cut into 1 ½-inch cubes
- 8 skewers
- To serve: crumbled feta cheese
Instructions
- To a large bowl, add all the marinade ingredients and mix well to combine.
- Add the pieces of chicken and toss to get evenly coated. Marinate into the fridge for up to 1 hour.
- To assemble the skweres, thread a piece of chicken, followed by a piece of pepper and onion. Repeat with the rest of the ingredients; you should get around 8 skewers.
- Meanwhile, heat a grill pan or the outside grill to medium-high heat.
- Grill the skewers for 6-8 minutes in total, or until the chicken is fully cooked through.
- Serve them with crumbled feta cheese and enjoy!

Notes
- Use chicken breast. You may use boneless chicken thighs but we much prefer using chicken breast.
- Red peppers can be substituted with any of the bell pepper. Yellow, green, or orange will work.
- Onion: we used red/purple onion, if you can't find any just use any onion.
- Do not overcook the chicken so it doesn't dry out and get rubbery.
- Any yogurt would work as well instead of Greek yogurt.
- Soak the wooden skewers for a good 15-20 minutes to preventing them from burning.
- Green olive tapenade could be an optional ingredient but adds a great taste.
- Store leftovers in an airtight container in the fridge for up to 3 days
- You can prepare this ahead. Marinate the chicken a day before.
