Ingredients

  • 4 halibut filets , de-skinned and de-boned (6 ounces)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 1/4 cup olive oil , divided
  • 1 lemon , cut into wedges
  • 2 tablespoons fresh parsley , minced

Instructions

  1. Season halibut with salt and black pepper
  2. Brush half the olive oil on the top and sides.
  3. Heat grill on high heat.
  4. Add halibut top side down, cook 2 minutes.
  5. Turn 90 degrees to make an x pattern and cook for 2 minutes.
  6. Flip, cook for 4 minutes.
  7. Brush with remaining olive oil and cook for 4 minutes on each side.
  8. Serve with lemon wedges and fresh parsley garnished on top.
