Grilled Halibut

Grilled halibut is a mildly sweet fish with a slightly smoky flavor and a bright tomatoey topping.

Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 halibut fillets 6oz each
  • ½ pint cherry tomatoes quartered
  • 1 teaspoon chopped fresh basil or dill

Instructions

  1. Preheat the grill to medium-high heat.
  2. Place the halibut in a shallow dish and drizzle with oil and lemon juice. Season with salt and pepper.
  3. Grill the fish until opaque in the center, about 3-4 minutes per side.
  4. In a small bowl combine cherry tomatoes, basil or dill, and a pinch of salt. Spoon over the fish and serve.

Notes

  • Variation:  Add ½ cup of chopped fresh peaches, mangoes, or cucumbers to the tomatoes.
  • Thicker fillets may need an extra minute or two while thinner fillets may need less time.
  • Leftovers will keep in the refrigerator for up to 2 days and in the freezer for 3 months.
