Grilled Halloumi salad

Grilled halloumi served on cucumber tomato salad is the perfect summer side dish or easy meat-free lunch. Fresh, healthy and delicious.

Ingredients

  • 200 g (7 oz) halloumi cheese
  • 3 large tomatoes (or 3-4 cups cherry tomatoes)
  • 1 English cucumber
  • ½ red onion
  • handful fresh basil leaves
For the dressing
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp red wine vinegar
  • 1 tsp salt
  • ½ tsp pepper

Instructions

  1. Slice the tomatoes, cucumber and red onion then add to a large bowl.
  2. Scatter over the fresh basil leaves.
  3. In a small bowl, whisk together the oil, lemon juice, vinegar, salt and pepper.
  4. Pour the dressing over the salad then toss to combine.
  5. Preheat a grill pan or skillet over medium-high heat.
  6. Slice the halloumi cheese into 1-2cm thick slices.
  7. Grill the halloumi for 1-2 minutes per side until golden brown then remove from the pan and drain on paper towels.
  8. Add the cheese to the salad and serve.
