Ingredients
- 200 g (7 oz) halloumi cheese
- 3 large tomatoes (or 3-4 cups cherry tomatoes)
- 1 English cucumber
- ½ red onion
- handful fresh basil leaves
For the dressing
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp red wine vinegar
- 1 tsp salt
- ½ tsp pepper
Instructions
- Slice the tomatoes, cucumber and red onion then add to a large bowl.
- Scatter over the fresh basil leaves.
- In a small bowl, whisk together the oil, lemon juice, vinegar, salt and pepper.
- Pour the dressing over the salad then toss to combine.
- Preheat a grill pan or skillet over medium-high heat.
- Slice the halloumi cheese into 1-2cm thick slices.
- Grill the halloumi for 1-2 minutes per side until golden brown then remove from the pan and drain on paper towels.
- Add the cheese to the salad and serve.
