Ingredients

  • 3 lbs chicken thighs boneless & skinless
  • 1 cup pineapple juice unsweetened
  • 1/2 cup ketchup
  • 1/2 cup reduced sodium soy sauce
  • 1/2 cup brown sugar
  • 1/3 cup chicken broth
  • 2 garlic cloves minced
  • 1 tsp fresh ginger minced

Instructions

    Cup of Yum
  1. Cut off any excess fat from the chicken. Place it in a large bowl. In a separate dish, combine all the remaining ingredients. Whisk to combine.
  2. Reserve 1/4 cup of the marinade to use for basting later. Pour the remaining sauce over the chicken, let it marinate for at least 5 hours or leave it overnight.
  3. Once the chicken is fully marinated, preheat the grill to medium high heat. Place chicken on to the grill. Optionally, save the raw marinade to make into a dipping sauce.
  4. Grill chicken on each side for about 8 minutes, baste occasionally with the reserved 1/4 cup of marinade. Chicken is fully cooked when internal temperature reaches 165F. Serve right away.
