Grilled Pineapple Kabobs with Honey & Lime

Ingredients

  • 1 pineapple cut into 1 ½-inch pieces
  • 2 tablespoons olive oil
  • ¼ cup fresh lime juice
  • 4 teaspoons honey or agave nectar for vegan
  • 3 mint leaves thinly sliced

Instructions

  1. If using wooden skewers, soak them into warm water for 30 minutes before using.
  2. Heat the grill to medium heat. Lightly brush the grates with oil.
  3. Thread the pineapple pieces onto 8 skewers. Brush on all sides with the olive oil.
  4. In a small bowl, whisk together the lime juice and honey.
  5. Grill the pineapple the pieces have golden brown grate marks on all sides, turning occasionally, about 6 to 8 minutes. Baste every couple of minutes with the lime and honey mixture.
  6. Transfer the skewers to a plate. Garnish with mint. Serve.
