Grilled Pineapple Mojito

This cocktail is a blend of a mojito and a piña colada in one. After the fruit is charred, muddle it with mint, fresh squeezed lime juice, and agave nectar; shake it with white rum and the new Baileys Almande, a delicious and light tasting spirit from the makers of Baileys.

Ingredients

  • 2 rings fresh pineapple
  • 6 mint leaves
  • 1 tablespoon lime juice
  • 1 tablespoon agave nectar
  • 2 ounces white rum
  • 3 ounces Baileys Almande or regular Baileys
  • 4 ounces pineapple juice

Instructions

    Cup of Yum
  1. Grill the pineapple rings to achieve grill marks.
  2. Muddle 1 grilled pineapple ring with mint leaves, lime juice, and agave nectar.
  3. Place muddled ingredients into a shaker. Combine rum, Baileys Almande, and pineapple juice.
  4. Shake and pour over ice. Do not strain.
  5. Garnish with a pineapple wedge.

Notes

  • The nutrition facts are calculated using regular Baileys. The almond milk version is lower in calories.
