Grilled Romaine and Watermelon Salad with Feta Vinaigrette
This easy and delicious grilled romaine and water melon salad is topped with a garlicky feta and lemon vinaigrette. Ideal for outdoor entertaining, it's delicious on its own or topped with grilled chicken.
Ingredients
- 4 wedges watermelon rind removed, seedless
- 2 romaine lettuce halved lengthwise, hearts
- 2 tablespoons olive oil
- salt to taste
- black pepper to taste
Feta Vinaigrette
- ¼ cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon oregano dried
- 1 clove garlic (grated)
- 1 teaspoon Dijon mustard
- salt to taste
- black pepper to taste
- 4 ounces feta cheese crumbled
Instructions
- Pre-heat grill over medium heat. While grill is pre-heating, brush watermelon and romaine halves with olive oil on both sides using a pastry brush. Sprinkle the romaine with salt and pepper on both sides.
- Place romaine and watermelon on the grill. Grill for 2-3 minutes per side, rotating once halfway through. You want a nice char but no need to over do it.
- To make the vinaigrette, place all ingredients except the feta (olive oil through salt and pepper) in a medium bowl and whisk until emulsified. Taste for seasoning and adjust accordingly. Stir in crumbled feta.
- Place the grilled romaine and watermelon on a platter or individual plates. Drizzle with the feta vinaigrette to serve.
