Grilled sausage, potatoes and peppers are combined in this delicious summer bowl recipe! It's easy enough to make for a weeknight dinner, great for a BBQ or perfect to take on your next camping trip!

Ingredients
- 1 lb red potatoes small dice
- 4 cloves garlic minced
- 1 Jalapeño minced
- 1 bell pepper small dice
- ¼ cup olive oil
- 2 tsp fresh cilantro chopped
- 1 tsp paprika
- 1 tsp salt
- 1 tsp black pepper
- 6 oz Jalapeno Cheddar Sausage
- ¼ cup cheddar cheese shredded
- 1 tbsp fresh cilantro chopped
Instructions
- Heat a grill to medium.
- Toss the potatoes, garlic, jalapeno and bell pepper with the olive oil, cilantro, paprika, salt and pepper.
- Place in a foil basket on the grill for 20 minutes, tossing every 5-7 minutes.
- Place the jalapeno cheddar sausage on the grill. Grill for 15-20 minutes, flipping halfway through.
- Divide the potato pepper mixture between two bowls. Slice the sausage and place on top of each bowl.
- Sprinkle with cheddar cheese and cilantro.
