Grilled Sausage Bowls

Grilled sausage, potatoes and peppers are combined in this delicious summer bowl recipe! It's easy enough to make for a weeknight dinner, great for a BBQ or perfect to take on your next camping trip!

Ingredients

  • 1 lb red potatoes small dice
  • 4 cloves garlic minced
  • 1 Jalapeño minced
  • 1 bell pepper small dice
  • ¼ cup olive oil
  • 2 tsp fresh cilantro chopped
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp black pepper
  • 6 oz Jalapeno Cheddar Sausage
  • ¼ cup cheddar cheese shredded
  • 1 tbsp fresh cilantro chopped

Instructions

  1. Heat a grill to medium.
  2. Toss the potatoes, garlic, jalapeno and bell pepper with the olive oil, cilantro, paprika, salt and pepper.
  3.  Place in a foil basket on the grill for 20 minutes, tossing every 5-7 minutes. 
  4. Place the jalapeno cheddar sausage on the grill. Grill for 15-20 minutes, flipping halfway through.
  5. Divide the potato pepper mixture between two bowls. Slice the sausage and place on top of each bowl.
  6. Sprinkle with cheddar cheese and cilantro.
