Grilled Shishito Peppers

Grilled shishito peppers are one of our favorite summer snacks! These are a great appetizer for the warmer months, perfect for happy hour and so easy and fast to make!

Ingredients

  • 2 pounds shishito peppers
  • olive oil, for drizzling
  • flaked salt
  • 1 lemon, juiced
  • 2 to 3 tablespoons crumbled cotija cheese

Instructions

  1. Preheat the grill to the highest heat.
  2. Toss the shishito peppers in a bowl with the olive oil - you want them all coated. Spread them on a grill pan.
  3. Place the grill pan on the grill. Close the lid and grill for 3 to 4 minutes, then toss and grill for 2 to 3 minutes more. You want the peppers to be charred and blistered.
  4. Remove the peppers and transfer them to a plate. Immediately cover them with a sprinkle of flaked salt, a spritz of lemon juice and the crumbled cotija cheese. Serve immediately!
