Ingredients

  • 1 skirt steak room temp
  • 1 cup watermelon diced into small cubes
  • 1 tablespoon jalapeno pepper seeds removed and diced
  • ½ lime juiced
  • 2 tablespoon cilantro chopped
  • 1 teaspoon cumin
  • 1 teaspoon salt sea salt
  • ¼ tsp black pepper

Instructions

  1. Preheat grill to medium-high.  Season skirt steak on both sides with cumin, salt, and pepper.
  2. Place on grill and cook for about 4-5 minutes per side for medium-rare.  
  3. In the meantime, make the salsa.  Toss the watermelon, jalapenos and cilantro with a squeeze of lime.  Add salt to taste.
