Grilled Sweet Potato Wedges with Mixed Herb Dressing

Use your grill to roast up some sweet potatoes and serve with a mixed herb dressing

Ingredients

Sweet Potatoes
  • 2 medium-large sweet potatoes
  • 2 tbsp avocado oil
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1/4 tsp cinnamon
Mixed Herb Dressing
  • 1/4 cup fresh herbs of choice - cilantro basil, flat leaf parsley etc
  • 1 tbsp extra virgin olive oil
  • 1 tsp red wine vinegar
  • 1/2 tsp crushed red pepper

Instructions

  1. Preheat grill to medium-high heat
  2. Slice sweet potatoes into wedges
  3. Combine spices in a small bowl
  4. Place sweet potato wedges on a baking sheet or large plate and brush on all sides with oil
  5. Season on all sides with seasoning mixture
  6. Place sweet potato wedges on the grill over direct heat
  7. Close the grill and cook for 6 minutes
  8. Flip the sweet potatoes, close the grill and cook for an additional 6 minutes
  9. Check the sweet potatoes, if they are soft and cooked through you can remove them from the grill
  10. If they need to cook a bit longer, remove from direct heat like onto a rack and cook off heat until cooked through and soft
  11. While the sweet potatoes finish cooking prepare a mixed herb dressing by finely chopping the herbs and mixing in a small bowl with the olive oil, vinegar and crushed red pepper
  12. Serve the sweet potatoes on their own or with a drizzle of the mixed herb dressing
