Ingredients

  • 2 pounds sweet potato scrubbed well
  • 3 tablespoons olive oil
  • kosher salt to taste
  • black pepper to taste

Instructions

  1. Preheat the grill to medium-high heat and lightly oil the grill grates.
  2. Slice the sweet potatoes into 1/4-inch-thick rounds, toss them with olive oil, and season with salt and pepper.
  3. Grill the sweet potato slices for 4-7 minutes on each side until tender and charred, checking frequently to avoid burning.
