Grilled Sweet Potatoes

Grilled sweet potato wedges are a delicious and easy-to-make BBQ side dish with a crispy charred exterior that's fluffy on the inside.

Ingredients

  • 2 large sweet potatoes cut into 8 wedges each
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoons garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • avocado mashed, for serving

Instructions

  1. Place the sweet potatoes in a large bowl with the olive oil, paprika, garlic powder, salt and pepper. Toss well to combine.
  2. Preheat the grill or grill pan to medium heat and oil the grates or pan.
  3. Arrange the sweet potatoes on the grill. Grill for 15 minutes or until lightly charred and tender, turning halfway through.
  4. Serve with mashed avocados, if desired.

Notes

  • The nutrition label does not include the optional mashed avocado.
  • Storage: Transfer completely cooled sweet potato wedges to an airtight container and store in the refrigerator for up to 4 days. Reheat on the grill over medium-high heat or in a 350°F oven for a few minutes until heated through.
