Grilled trout salad with Sriracha lime dressing

Ingredients

  • 300 g trout/salmon
  • 1 teaspoon smoked paprika
  • pinch of cayenne pepper
  • 1/2 teaspoon sugar
  • pinch of salt
for the salad
  • baby lettuce leaves
  • avocado sliced
  • cherry tomatoes halved
  • steamed tenderstem broccoli
for the dressing
  • Juice of 1 lime
  • 2-3 teaspoons Sriracha
  • 2 tablespoons olive oil
  • salt to taste

Instructions

    Cup of Yum
  1. Combine the spices and the sugar and rub generously over the trout.
  2. Grill the trout in a hot griddle pan until cooked through then remove and allow to cool to room temperature.
  3. Plce the lettuce on a serving plate and top with the salad ingredients.
  4. Whisk together the salad dressing ingredients and drizzle over the salad.
  5. Serve immediately.
