Ingredients
- 1 Medium Seedless Watermelon 2 1/2-3 pounds
- 2 limes juiced and zested
- 1/4 cup honey
- 1 teaspoon kosher salt
- fresh cilantro chopped for serving
- crumbled Feta cheese for serving
Instructions
- Preheat a grill to high heat (approximately 450-500 degrees Fahrenheit).
- In a small bowl, whisk together the lime juice, lime zest, honey and salt. Set aside.
- Cut the watermelon into 2 halves. Then cut each half into quarters and cut the watermelon into triangle pieces that are approximately 1-1 1/2 inch thick with the rind on the watermelon still attached.
- Brush the lime mixture onto both sides of the watermelon triangles and place them directly on the grill on the grill grates.
- Cook for 2-3 minutes per side until you see grill marks on the watermelon and it’s slightly soft.
- Remove from the grill.
- Remove the watermelon from the grill and then serve topped with the fresh cilantro and feta cheese.
- Enjoy!

Notes
- This is best served immediately off the grill while warm. This recipe makes approximately 20 watermelon wedges and will serve roughly 6 people for a delicious appetizer or dessert.
