Ingredients

  • 2 zucchini sliced lengthwise into 1/4-inch-thick slices, medium
  • 1 tablespoon extra-virgin olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper freshly ground
  • lemon for finishing the dish, wedges
  • 1 tablespoon parsley chopped, fresh

Instructions

  1. Preheat a grill or grill pan to medium heat.
  2. Place the zucchini on a large plate or tray. Drizzle with olive oil and sprinkle with garlic powder, salt, and pepper. Toss to coat.
  3. Grill the zucchini for 1 to 3 minutes per side, or until char marks form and the zucchini is tender but still has some bite.
  4. Remove from the grill and squeeze lemon juice over the zucchini. Garnish with fresh parsley and serve.
