These Grinch-inspired gingerbread sandwich cookies are as pretty as they are tasty, with cream cheese frosting layered between two chewy ginger cookies.

Ingredients
- 3/4 cup unsalted butter softened
- 2/3 cup brown sugar
- 1/3 cup granulated sugar
- 1/2 teaspoon salt
- 1/4 cup molasses
- 1 egg
- 2 1/4 cup flour
- 1 teaspoon cinnamon
- 1 1/2 teaspoons ginger
- 1/2 teaspoon baking soda
- green food dye
- Red heart sprinkles
- 3/4 cup Cream Cheese frosting
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper or silicone mat.

To Make the Cookie Dough
- Cream the softened butter, salt, brown sugar, and sugar together.
- Add the molasses and egg to the creamed mixture and blend until smooth.
- Add green food dye a few drops at a time to the bowl of batter until you have a dark green color.
- Mix in the flour, cinnamon, ginger, and baking soda until well combined and a thick cookie dough.

To Make the Cookies
- Use a Tablespoon to portion out 2-inch balls of dough.
- Pour sugar onto a small plate. Take a round glass and press the bottom into the sugar (so that some of it sticks to the bottom of the glass) and use the glass to press the cookies so they are flat on top and have some of the sugar on top.
- Bake for 10 minutes, then remove from oven to a wire cooling rack. While the cookies are still warm, press a heart sprinkle into the top of HALF of the cookies. Allow the cookies to cool.
- Scoop the cream cheese frosting into a piping bag and cut the tip to about a ½ inch sized hole, or use a round tip.
- Take the cookies that don't have a sprinkle on top and flip them upside down. Pipe frosting onto the bottom of them.
- Take the cookies WITH the sprinkle on top and place them on the frosted cookies to form a sandwich.
Notes
- Watch cookies closely when baking. You don’t want them to brown because it will affect the desired green color.
